Only reason I'm stirring before noon is my clock tricked me.... silly clock turning back an hour on me. I tried with all my might to go back to sleep but it just wasnt happening.

Moved to OT now since this has past & it's not about Hurricane Talk. :)

Since we're sharing recipes, & since no one should have to wait for a good batch of Caniac Mojo cookies:

Sugar & spice cookies

1 1/2 c. flour

1 tea. EACH ground cinnamon & vanilla extract

1/2 tea. EACH baking soda & ground ginger

1 lg. egg, lightly beaten

1/2 c. butter

2 tes. molasses

1/4 c. sugar

3/4 c. firmly packed dark brown sugar

cinnamon sugar for topping, optional

Preheat oven to 350 degrees; grease at least two cookie sheets. Combine flour, cinnamon, baking soda & ginger in one bowl; combine egg, molasses & vanilla extract in another bowl; beat butter & both sugars together in a third bowl until fluffy & beat in molasses mixture on low speed. Beat in flour mixture just until dough forms & drop by teaspoonfuls 2" apart on cookie sheets, flattening slightly. Sprinkle lightly w/ the cinnamon sugar & bake 10-12 min., until just set. Transfer sheets to wire racks to cool 3-4 min., then transfer cookies to wire racks to cool completely.

Note: if you like your sugar & spice cookies a little flatter & harder, completely melt the butter before beating it in w/ the two sugars; if you like them more on the soft & fluffy side, then make sure the butter is solid but at room temp. instead of melted.
